German Winter thyme is regarded as the quintessential winter-hardy upright thyme plant. Similar to other varieties of thyme, German Winter has a mild minty, herbal flavor perfect for seasoning or teas. Purple flowers in the summertime are also highly attractive to a number of pollinators and can be used in similar ways to the leaves. Commonly used in a variety of culinary ways for its minty, herbal flavor profile, thyme is most popular in soups, roasted vegetables, and in compound herb butters.
Mature plants typically reach a height of around 6-12" and do best when planted about 6-8" from one another. German Winter thyme is perennial, and will last through hot, dry summers, and cold winter climates, though they may benefit from mulching in the late fall.
