Attractive two-toned fruit make Zephyr summer squash stand out in a crowd! Light yellow with pale stripes turned to green striped bloom ends. Fruits can be harvested early for "unusually delicious, nutty flavor," medium-thick skin, and firm texture. Versatile for culinary use, and can be sauteed, grilled, roasted, or stuffed.
Matures in as early as 54 days, summer squash blossoms can also be harvested and cooked, but it's important to leave a good number of female flowers in order to actually produce the squash.
This variety of yellow summer squash has a relatively open habit, but spreads fairly easily; plants can be placed 18-24" apart from one another, but should be given about 6' of room to spread and produce their fruit. Individual stalks with leaves and flowers may reach up to 3' in height.
