Rosemarinus officinalis 'Hill Hardy' is a cold-hardy, upright rosemary variety with glossy, needle-like leaves and light blue flowers in spring. Rosemary is an excellent perennial herb, resistant to deer and rabbit grazing as well as drought, but also highly attractive to a number of pollinators; the 'Hill Hardy' variety is an especially excellent choice for areas where winter temperatures routinely dip below freezing.
Commonly used in chicken or potato-based dishes, as well as in soups and even cocktails, rosemary is a versatile herb with a lot of herbal, piney aroma and flavor. Mature 'Hill Hardy' plants kept over several seasons will require a decent bit of space, with older rosemary bushes reaching sizes of up to 3-4' tall and wide.
