Known as poblanos when fresh and anchos when dried, this chili is versatile and smoky! With only a very mild spice of 1,000-2,000 Scoville units, this pepper is extremely common in a variety of Mexican dishes, including stuffed chile relleno and mole, where it's the star of the show.

The 'Ancho Gigantea' variety of poblano typically first matures to a dark glossy green before maturing to a dark red form. Relatively compact among peppers, poblano plants only grow to around 2' tall with fruits averaging 5-7" in length.
