The 'Ping Tung' variety is a long, Asian eggplant with fruit growing up to 14" long in shades of white, lavender, and rich purple. As a thin skinned variety, it works very well for sautees and stir-fries.
Mature plants can reach up to 3' in height and have a structure similar to tomato plants; good spacing is between 18-24". Lighter colored eggplants like 'Ping Tung' tend to mature faster than darker eggplants like the 'Diamond' variety.
